Stuffed Peppers

It has been a while since I have posted anything about my cooking. Here is what I made for dinner today.

Now my roommate is a vegetarian, so when I make dinner I have to be sensitive to her food needs as well. Even though she is the out numbered 2 to 1; however, it's her house so she wins!



What we have here is a half green bell pepper stuffed with white rice (because at the last minute I realized I didn't have brown), Barilla baking sauce, Mozzarella cheese, TVP and tomato.

In case you are not familiar with TVP, it stands for Textured Vegetable Protein and it looks like this.



You use equal parts of liquid to TVP to hydrate it. It is similar to tofu as it doesn't have any taste of it's own and it picks up the flavors from whatever you are making. I actually prefer using this over a soy substitute meat product. Of course you can vegenize this by using vegan cheese

When I first moved here I really thought I would have an issue with the food, but for the most part it has been just fine. If I want meat I buy and make it usually do the delight of her husband. I realize I do not need meat everyday as long as I have CHEESE! Of that we have so much of. There are at least 6 different kinds of cheese in the house right now. Probably more like 10 different kinds. That is a post for another time!
